Our chef, Paris, began at a tiny, hole in the wall, off the beaten path on county road 19 in WV. The goal was to offer a healthy breakfast in a town without many breakfast options. It started with a few gluten free and vegan options. Then, people started coming in asking if certain items were dairy free, soy free, etc. This gave her a newfound personal challenge - to build the most FODMAP friendly menu in WV. Paris wanted to bring a small, local diner to the variety of eateries in town, that is allergen friendly oriented. She has prepared a menu that uses contemporary ingredients as well as vegan and gluten free alternatives. As well, Chef, bakes a variety of confectioneries that are some variation of gluten free/dairy free/soy free/nut free, so we always have some tasty pastries available every weekend! Just inform our lovely wait staff your preference so we can accommodate!
